DUCK THIGH AND DRUMSTICK IN WHITE WINE

INGREDIENTS

• 02 VG duck thighs and drumsticks

• 2 sprigs of rosemary

• 1 sprig of thyme

• 1 bay leaf

• 200ml dry white wine

• 1 clove of garlic

• Salt and white pepper

PREPARATION METHOD

Season the thighs and drumsticks with salt, pepper, herbs, bay leaves, garlic and half the wine. Leave to marinate in this seasoning for at least 6 hours. Place the thighs and drumsticks together with the seasoning on a baking sheet, cover with aluminum foil and place in a preheated oven at medium temperature. Bake for 45 minutes, remove the foil and leave in the oven until the thighs and drumsticks are golden brown. Set the meat aside in a warm place, drain the excess fat from the pan and add the rest of the wine. To make the sauce, bring the pan to the boil over a high heat and add the rest of the wine to loosen any sticky parts. Arrange the thighs and drumsticks on the plate and drizzle with the sauce.
