DUCK BREAST WITH BERRIES SAUCE

INGREDIENTS

02 PIECES OF VG DUCK BREAST

• 200g blackberry/raspberry jam

• ½ glass of red wine

• 2 Tbsp raspberry or wine vinegar

• 2 fresh sage leaves

• 1 Tablespoon finely chopped red onion

• 100g red fruit of your choice (blackberries, raspberries, strawberries and cherries)

• Salt and white pepper to taste


PREPARATION METHOD

Make a few shallow cuts in the duck breast fat. Season with salt and pepper and set aside for five minutes. In a hot frying pan, fry the breasts first with the fat side down. As soon as they are well browned, turn them over and fry the meat side, turning it pink inside. Set the breasts aside in a warm place. Use two tablespoons of the fat from the frying pan to brown the onion. Add the jam and then the vinegar. When it starts to boil, add the fruit and incorporate it into the sauce for five minutes. Cut the breasts into thin slices and arrange them in a fan shape on the plates, placing the red fruit sauce next to the meat.


Serving suggestion:

Serve with parsley mashed potatoes, wild rice or a green salad.
