INGREDIENTS

600G VG DUCK LEG CONFIT

• Enough duck or pork fat to cover the legs

• 04 garlic cloves

• Sprigs of sage, rosemary, thyme, and bay leaf

• Salt and pepper to taste


PREPARATION METHOD

Make a circular cut around the leg tendon. Salt the meat and add the herbs and pepper. Let it rest for at least 6 hours. In a pot, place the legs with the herbs and whole garlic cloves. Cook  over low heat (never fry) for approximately 6 hours until the legs are very tender but not   falling apart. 

Remove and store the legs covered with fat in a container in the freezer. When ready to use, remove the excess fat and bake for 30 minutes or until very crispy.
