INGREDIENTS

• 1/2 VILLA GERMANIA DUCK

• 300ml orange juice

• 200ml lemon juice

• 150g chopped red onion

• 150g green or yellow bell pepper

• Wrap bread

• 300g diced canned tomatoes

• 300g buffalo mozzarella shavings

• 50g toasted and chopped almonds

• 100ml (6 tablespoons) extra virgin olive oil

• 15ml (1 tablespoon) white wine

• Salt and sugar to taste

PREPARATION METHOD

Marinate the duck in orange and lemon juice for 12 hours. Season with salt, pepper, and bake in a preheated oven at 150ºC (300ºF) for 2 hours. If necessary, add 1/2 cup of water. Remove the skin and bones from the duck and shred the meat. In a pan, heat the olive oil and onion. Then add the shredded meat, bell pepper, and tomatoes. When it starts boiling, add the white wine. Turn off the heat and add the almonds.

FINALIZATION:

Place 3 tablespoons of the filling on the wrap bread, add the cheese on top, roll twice, pressing to compact the filling. Cut diagonally and serve.
