INGREDIENTS

02kg DUCK HEARTS

• 1 orange

• 1 lemon

• 1 teaspoon chopped garlic

• 1 tablespoon olive oil

• 1 tablespoon mild vinegar

• 1/2 teaspoon chipotle powder

• 1 teaspoon salt

• Ground pepper

• Chicken broth

• 2 teaspoons mild vinegar

• Fresh cilantro, chopped

• Citrus fruits

PREPARATION METHOD

Place the marinade ingredients in a zip-lock bag. Add the duck hearts to the marinade. Seal the bag and let marinate in the refrigerator for 1 hour or overnight. Remove the hearts from the marinade and skewer them. Heat the grill and cook the skewers until done.

For the sauce: Strain the marinade and place it in a small saucepan with chicken broth and mild vinegar. Let the sauce reduce by half. Reserve and serve when the skewers are ready.
