INGREDIENTS

1.4kg VG duck thighs and drumsticks 

• 1/4 cup Sriracha chili sauce

• 3 tablespoons honey

• 1 tablespoon soy sauce

• Juice of 2 Persian limes

• Salt to taste


PREPARATION METHOD

Salt the duck thighs and drumsticks and place them skin side up on a baking sheet. Place them in the oven at 200°C. There is no need to preheat the oven. The temperature should be gradually increased so that the duck fat moistens the bottom of the roasting pan and the thighs and drumsticks don't stick to it. Bake until the meat is tender, about 90 minutes to 2 hours.

Meanwhile, mix the remaining ingredients in a small saucepan and heat just enough to incorporate the honey. When they are roasted, remove them, but keep the oven on. Gently place them in a large bowl and pour the sauce over them. Carefully mix and place them back on the baking sheet and return to the oven. Let the sauce caramelize on the meat and remove from the oven. Serve afterwards!
