INGREDIENTS

VG duck breast in strips

• 1 tablespoon vegetable oil

• 1 small red onion, finely sliced

• 1 red bell bell pepper, seeded and finely sliced

• Lime juice

• 4 fresh or dried kaffir lime leaves, finely chopped 

• 1 large orange or yellow bell bell pepper, seeded and cut into large strips

• 2 pak choi heads, separate large leaves halved

• 4 tablespoons Blue Dragon chilli & ginger sauce

• Lime juice

• A handful of coriander



PREPARATION METHOD

Heat the oil in a large frying pan or wok. Season the duck fillet and fry for 2 minutes, stirring constantly. Return the wok to the heat and add the onion, chili, lime leaves and pepper. Fry over a high heat for a few minutes until fragrant, then add the pak choi, chili sauce and ginger and a little salt. Stir for another minute, remove from the heat, add the duck fillet and lime juice to taste. Finish with the coriander and serve immediately with white rice as an accompaniment.
