CHICKEN THIGH AND DRUMSTICK WITH GARLIC AND LEMON

INGREDIENTS

• 500g VG FREE-RANGE CHICKEN THIGH AND DRUMSTICK

• Zest of 1/2 lemon

• Juice of one lemon

• 6 cloves of garlic, peeled

• 6 sprigs of fresh thyme

• 1 tablespoon of butter

• Salt and black pepper to taste

PREPARATION METHOD

In a bowl, cut the chicken thighs and drumsticks at the joints and season with salt, black pepper, lemon zest, lemon juice, and thyme. Mix all the seasonings well. Cover the bowl with aluminum foil and let it rest in the fridge for 30 minutes. After resting, place the chicken thighs and drumsticks skin side up in a baking dish along with the marinade.

Spread the butter over the thighs and drumsticks. Preheat the oven to 180°C (350°F) and bake for approximately 35 minutes. During this time, occasionally baste the chicken with the juices from the dish (this will make the skin golden and the chicken more succulent and flavorful). Once the chicken is golden, remove it from the oven and serve.
