INGREDIENTS

• 01 PECHO DE PATO VILLA GERMANIA

• 01 MUSLO Y CONTRAMUSLO DE PATO VILLA GERMANIA

• 50g de jengibre en rodajas

• 4 anís estrellado

• 50g de cebollino

• 30ml de salsa de ciruela

• 500ml de vinagre de arroz

• 50ml de miel

• ½ pepino cortado en rodajas

• 30g de cebollino en juliana

• 2 panes planos (masa muy fina que se hornea como una pizza)

• 5ml de salsa de soja dulce

PREPARATION METHOD

In a baking dish, make a layer with the duck cuts and cover with a layer of ginger, star anise, and green onions. Bake in a preheated oven at 180ºC for 30 minutes. Remove from the oven and discard the vegetable layer. In a bowl, mix the vinegar with the honey and baste the duck pieces halfway. Return to the oven and bake for 10 to 15 minutes until it starts to brown. Remove from the oven, pour the remaining mixture over the duck, and bake for another 10 minutes until the skin is golden and crispy. Remove from the oven and set aside.

On a plate, arrange the cucumbers, julienned green onions, and the preheated flatbread cut into 4 triangles. Slice the duck breast and separate the leg from the thigh. Mix the plum sauce with the soy sauce, coat the pieces, and return to the oven for 5 minutes to caramelize. Assemble the dish with the duck, vegetables, flatbread, and serve.
