PASTA WITH CHEDDAR SAUCE AND DUCK BREAST

INGREDIENTS

500g diced duck breast VG

• 1 bunch of broccoli with the flowers separated and cut;

• 1 clove of garlic;

• 2 tablespoons of olive oil.

• 3 tablespoons butter

• 1/3 cup wheat flour

• 2 cups whole milk

• 1 teaspoon dijon mustard

• 2 cups cheddar cheese

• Tabasco sauce to taste

• salt and pepper

• 400g of your choice of small, flat noodles



PREPARATION METHOD

Heat the oil and quickly brown the garlic. Add the broccoli and sauté until golden brown. Add the broccoli and sauté with the . Turn off the heat when the broccoli is cooked and still firm. Add the sauce to the frying pan and incorporate the pasta while it is still hot. Melt the butter and add the flour. Let the flour cook for a few minutes, stirring constantly (preferably with a whisk). Gradually add the milk, stirring constantly. Lower the heat, add the seasoning (mustard, Tabasco, salt and pepper) and let the sauce thicken for about 7-8 minutes. Finally the cheese! Add the cheese and let it melt. Cook the pasta in well-salted water until it's al dente.
