PENNE WITH DUCK SAUSAGE AND BROCCOLI

INGREDIENTS

500g VG duck sausage

• 2 liters of water

• Penne pasta

• Broccoli

• 1 tablespoon olive oil

• 1/2 teaspoon ground pepper

• 1/8 teaspoon kosher salt

• 1 1/2 tablespoons lemon juice

• Romano cheese, grated

PREPARATION METHOD

Bring the 2 liters of water to the boil in a large saucepan. Add the pasta and cook for 7 minutes. Add the broccoli and cook for 2 minutes. Drain the pasta mixture, reserving 2/3 cup of the cooking liquid to keep the pasta warm. Heat a large frying pan over medium heat. 

Add oil to the pan and then the sausage. Cook for 6 minutes or until golden brown, stirring occasionally. Add 2/3 cup of the reserved pasta water, pasta mixture, pepper and salt. Bring to the boil. Cook for 2 minutes or until slightly reduced. Add the lemon juice and sprinkle with cheese.
