CREAMY RICE WITH DUCK BREAST CUBES

INGREDIENTS

500g diced VG duck breast 

• 2 tablespoons oil

• 2 cups raw rice (360g)

• 400g cream or fresh cream

• 1 medium onion, chopped

• 150g grated Parmesan cheese

• Nutmeg to taste

• Salt and pepper to taste

• Green seasoning to finish


PREPARATION METHOD

Cook the rice and set aside. Season the meat with salt and pepper. In a large frying pan, add the oil and brown the meat over a high heat so that it doesn't add any juices, about 5 minutes. Add the onion and sauté for another 2 minutes. Add the cream, Parmesan cheese and a pinch of nutmeg. Add the cooked rice. Cook for 2 minutes until creamy, correct the seasoning.

Finish with green seasoning.
